Slow Cooker Italian Tortellini Stew

 

 Eating healthy has been our top priority in 2013.

{Do you know I've lost 16 lbs. since Jan. 1?} 

Encouraging my kids to try new foods, particularly vegetables, has also been a top priority.

Whenever possible I use my slow cooker.  It just makes life easy.  

This Italian Tortellini Stew is healthy, easy, and takes little time to make.   It takes 15 minutes to throw this in the slow cooker (usually right after lunch, when I'm already in the kitchen).   

One of my children is a very picky eater, so he likes the tortellini in this stew.   He ate an entire bowl of this, so that's a big success! 

Of course, planning my meals in advance is a great help in staying healthy.   I use Plan to Eat religiously to save my recipes, plan my meals, and generate shopping lists.  I couldn't live without it.  (You can try it for 30 days for FREE if you want to check it out for yourself!)

I write a lot about Plan To Eat because it is actually something I started using and have STUCK TO for a long time.  I am all about making my household tasks easier and more efficient so I can focus on bigger things!  

 

(I love using my Crinkle Cutter for the onion and zucchini.  This is probably my favorite kitchen tool!)

This looks REALLY REALLY good. Like "I want to make this today do we have the ingredients good". I toy with "gluten free" On the one hand I would love to try it but I am not sure how to began. Can you recommend a good FREE book or site? Like "Gluten Free for Dummies"? :)

Looks yummy! We did beef stew in the crock pot over the weekend and you can always go light on the beef. Ours had beef chunks, red potatoes, baby carrots, corn, green beans, diced tomatoes, and seasoned with onion soup mix plus some wochestershire sauce. Tossed it all in and cooked on low for about 7 hours. Easy and delicious! I think the crock pot is wonderful and have thought about getting more than one. LOL!

Other things I love to do in the crock pot:
beans
hamburgers when it's snowing and we can't grill
potato soup heavy on veggies
baked potatoes
roasted veggies

I FINALLY tried this recipe today, and it's great! I love that it has lots of vegetables in it plus my kids love tortellini. It was a hit, and I will make it again. I am going to post a blog about a slow cooker salsa chicken recipe tomorrow that you might like. Take Care!
