Working on a Healthy 2013 ~ Whole Wheat Oatmeal Raisin Muffins
My journey to a healthier me in 2013 really means a healthier family, too.
I didn't think it would go over so well if I made the kids go COLD TURKEY on sugar and all those yummy things they love.
I, instead, have been trying to ease them into the changes and make good tasting alternatives to some of the things they might be missing.
One thing my children always loved for breakfast was muffins. The muffins, though, were usually the box kind (am I kicked out of the homeschool mom club?) and many times had chocolate chips and lots of butter and sugar.
{sigh}
I don't think my family had TERRIBLE habits, but they weren't wonderful, either.
I know, I'm a bit late to the health party, but I'm here and ready to go!
As I find and try new recipes I will share them with you.
Of course, I pin them all to my Health board on Pinterest, and from there they go straight into my Plan to Eat (and you KNOW how much I love Plan to Eat!).
These muffins were easy to make. I needed to stock my pantry with wheat germ and wheat bran, but other than that all of the ingredients were common.
They took a bit of time to make, but I think it will be well worth it to have a nutritious breakfast.
I am committing to spend MORE TIME IN THE KITCHEN this year.
I think we will all be happier and healthier if I do.

I am finding that buttermilk can be replaced with soy for dairy free. I have favorite cinnamon rolls I make on the holidays and while I have not been able to make them gluten free without them falling apart, I switched out the buttermilk for soy and could not tell the difference! These look delightful!
i used to make some yummy bran muffins that used bran cereal as part of the batter. These look yummy!
I have found that muffins freeze really well. Maybe you can make a big batch of these at one time, freeze what doesn't get eaten immediately, and then just pull them out to warm in the microwave on other days you are craving muffins. It would save you some time and encourage you to keep eating healthfully.
For what it's worth I fix the box muffins for Sunday mornings because I can make it the night before (without making a big mess to clean) and it's quick to eat on a hurried morning before Bible class. However, I make it as healthy as I can by following the low fat directions on the box: skim milk, applesauce in place of oil, and egg whites instead of whole eggs. Also, instead of eating two or three muffins each, my family and I have one muffin with fruit and a sausage link or with a serving of yogurt. It makes me feel better, at least.
We frequently start our morning with a smoothie using a chocolate (of course) plant based shake mix, then I add frozen bananas, a little peanut butter and either spinach or kale from our Tower Garden on the deck. I feel good knowing my kids are starting the day with a fruit AND a vegetable.
Through the Dr. Sears Wellness Institute, I have taken the coaching program for L.E.A.N., and Dr. Sears recommends a 'Brainy Breakfast' for kids. Smoothies, eggs and toast, oatmeal with fruit and milk are a few suggestions he makes to start your day. Parents need a brainy breakfast too!

I love whole wheat, but didn't introduce it my kids early enough. I tried it over the years, unsuccessfully. However, my middle daughter & son choose whole wheat over white. They're more health conscious. Maybe I did something right ???!!!

I have been making pumpkin/ sweet potato almond waffles... they are so good and so healthy. They keep really well on the refrigerator and are so filling... I make those round waffles that are scored in 4 parts and the recipe I got makes almost 12. Well, it lasts us 2-3 meals.... and I have 4 kids that eat really well... so yeah, they are super filling but light!!
I will be posting the recipe with photos soon... maybe today!! It's snowing here... the perfect weather to make some more!!
I have been doing the healthy thing for years now but everything changed for much better when I read "Wheat Belly." It's worth checking it out. I was not a believer but when I decided to actually try the lifestyle within ONE week I saw the difference. No bloating, no hurting of joints, back or swelling... I haven't had one cold or sinus infection this year... I began this in sept/ oct of last year. You should read it!! OH, I also lost weight really easy! :)
