Wednesday - What's for Dinner - Autumn Sausage Slow Cooker Casserole

I get the BEST ideas when I am sitting on the couch late at night surfing around on my iPad... I love to read blogs and get teaching tips, project ideas, and recipes! Tonight's recipe comes from The Home on a Hill.

We have had a fun day - nature walk with friends, then lunch and a trip to the bookstore. It was almost 3:00 p.m. by the time we got home and I put this in the crockpot; and it will be ready by dinnertime - and tonight it will also be WORLD SERIES time!

Autumn Sausage Casserole

1 pound of sausage
1 large or 2 small apples
1 yellow onion chopped
1/2 cup chopped carrots
3 cups already cooked long grain rice
1/2 cup raisins
1 T dried parsley flakes
1 T brown sugar
1/2 tsp all spice
1/2 tsp cinnamon
1/8 tsp back pepper
1/3 cup chicken broth or water

Brown sausage, dump all ingredients in slow cooker. Stir, cover and cook low 5-7 hours or high 3-4 hours.

That looks yummy! Have you ever tried it with uncooked rice? Also, is it ground sausage?

Oh Mary, let me know if you LOVE IT..I will try it next week. I did chicken legs today in the Crock Pot with BBQ sauce...however, it's 70 and humid here, so I am hot...looking forward to it though.

Rebecca, I have not tried it with uncooked rice. I am using some sweet ground sausage, but I think it probably should be made with the other kind - it still smells and tastes yummy, though!

Meslissa - it is hot and humid here today, too - but thankfully it will be down in the 30s Friday night. It's about time!

I used the sweet sausage (breakfast sausage, I guess) and it was REALLY good, so I'm sure it works either way!
