The Best Gluten Free Macaroni & Cheese
There are certain foods -- specifically COMFORT FOODS -- that are really hard to replicate when you are gluten free.
Macaroni and Cheese was one of those things that stumped me for nearly a year.
After making this recipe a handful of times, it has passed the family test and must be shared with you. This Mac & Cheese is fairly simple to make, VERY cheesy, and oh so good.

The Best Gluten Free Pasta
One of the things I've found with any type of gluten free pasta dish is that the BRAND OF PASTA MATTERS!
I have had the best luck with Tinkyada pasta. True to the labeling, this pasta is not mushy - it cooks up just like regular pasta and if I didn't tell you it was gluten free you wouldn't know.
*Usually I purchase several gluten free items in bulk on Amazon - I know they will always be there and the price is generally the same as my local grocery store. Gluten Free Bisquick, Bob's Red Mill Gluten Free Flour, and Tinkaya pasta are all great gluten free buys on Amazon.

This recipe is kept (along with all of my recipes) in Plan to Eat, a recipe storage/meal planning/grocery list generator tool that I have loved for the past three years.
I have two suggestions to make this the best Mac & Cheese ever:
- Use Tinyada pasta
- Grate your own cheese (don't use the shredded stuff in the bags!)
Other than that it's fairly simple - just make sure you have everything laid out when you start cooking, because it gets put together quickly at the end (with milk and cheese on the stove, which always stresses me out!).
This recipe is wonderful for a relaxing night at home, or we recently used it as an accompaniment to a lovely meat at Christmas dinner.
