What's for Dinner? Barbequed Crockpot Chicken

Happy Wednesday! My crockpot is pretty much my best friend. I use it at least twice a week, so I'm always looking for interesting, easy recipes. While browsing through recipe blogs I stumbled upon Vanderbilt Wife - I've really enjoyed this blog and I asked the owner (Jessie) if I could use one of her recipes I had made and use it in today's post. She said sure - so I hope you visit her site and tell her I sent you. What I love about Jessie is that she admits she isn't perfect - well, who is? But, I appreciate her honesty.



Now, on to the recipe:

Barbeque Crockpot Chicken

4 boneless, skinless chicken breasts (I used chicken thighs and they were wonderful... basically I buy what's on sale!)
1 bottle any barbecue sauce (I used Publix brand - yum!)
1 can pineapple chunks with juice
1 green pepper, large dice
1 onion, large dice

Mix all together and cook on low 8-10 hours in the crockpot. Mine was done after 7 hours, so just watch it carefully near the end - you don't want the chicken to dry out. I served it with crescent rolls (my son is addicted to them, and he's always happy about a meal if they are involved) and additional steamed veggies.

Here it is before I turned the crockpot on -- I love the peppers and onions!
