Wednesday - What's for Dinner? Chicken Bites

Tonight's dinner is going to be simple, quick - and a favorite of both of my kids. My daughter, especially, likes chicken nuggets, and I like to make them where I know all of the ingredients that were used! Here is a quick recipe for chicken nuggets. I make green beans, cinnamon applesauce, and some crescent rolls to go along with them and everyone in my house is a happy camper!

Chicken Bites

4 boneless, skinless chicken breasts, cubed
1/2 cup mayonnaise
1 sleeve Ritz crackers

Toss chicken cubes in mayonnaise; roll in crushed crackers. Place on an aluminum foil-lined baking sheet and bake at 350 for 10 minutes. Turn and bake another 10 minutes or until juices run clear when chicken is pierced with a fork. Makes 4 dozen.

We love Ritz Cracker Chicken....very similar. Except I use a LITTLE BITTY bit of butter to roll the chicken in (may try olive oil or coconut oil next time for a healthier meal)...and I"m looking for something healthier to replace the Ritz Crackers...but gives the same flavor!
