Wednesday - What's for Dinner?

Tonight we're keeping it simple! We are also really trying to watch what we eat around here. This meal is easy and takes just a few minutes to throw in the oven.

1. Hormel Apple Bourbon Pork Tenderloin - if you haven't bought one of these, you should! (I try to buy them when they are on sale and keep a few in the freezer.) I like that they cook in less than an hour, and they are always very tasty. Be careful, a few of the varieties can be a little salty, but my favorite is the Apple Bourbon. You can see all of the nutrition facts on their website I've linked you to above.

2. Baked Sweet Potatoes - I just put mine on a baking sheet and bake for almost an hour around 375 or until done.

3. Brussel Sprouts - I am going to use this Roasted Brussel Sprouts recipe from Allrecipes. Sounds yummy!

Now, I will have three things in the oven at the same time, but I can put the pork tenderloin on the top rack and the Brussel Sprouts and Sweet Potatoes on the bottom rack and they all take basically the same amount of time. (I wish I had a double oven!)
