Wednesday - What's for Dinner - Lemon Pepper Fish

I just have to say that last week's Wednesday dinner was EXCELLENT! If you missed the Autumn Sausage Slow Cooker Casserole you need to try it - soon! This week's recipe comes from Gooseberry Patch. Every single thing I make from one of their cookbooks is excellent, and (if I'm making it from Our Best Quick and Easy Recipes) takes very little time and effort.

Lemon-Pepper Fish

1 lb. frozen cod, thawed
16 oz. package frozen stir-fry vegetables
salt to taste
1 t. lemon-pepper seasoning
1 t. dried rosemary
1 c. tomato juice
2 1/2 T. grated Parmesan cheese

Line a 13x9 baking dish with aluminum foil. Place cod on foil and cover with vegetables. Season with salt, lemon-pepper seasoning and rosemary. Pour tomato juice over ingredients in dish; sprinkle with Parmesan cheese. Bake at 400 degrees for 20 to 25 minutes or until fish flakes easily with a fork and vegetables are tender. Serves 4.
